“Maestro Norcino” school |
Founded in 1991, in the factory Azienda
Agricola il Collaccio, it gives the participant
four different degrees:
- Porcello Onorario (settimana rosa)
- Apprendista Porcello (1 anno di corso)
- Gran Porcello (2 anno)
- Grande Verro (3 anno).
The Grande Verro diploma equals
a bachelors degree, it is achieved after three
years and entitles you to a specific diploma.
Norcineria course and “Pink week”
:
will be held from late afternoon of December 26th
until the January 2nd.
Programme:
- The students will spend time in the Norcineria
with Mario and Salvatore (our two norcini) learning
to prepare salami, sausages and ham.
