These are just a selection of the
traditional recipes for enjoying the Norcia
black truffle. The Truffle may be used in
many other ways.

| 1) BAKED BREAD “CROSTINI” WITH
NORCIA BLACK TRUFFLE |
4 servings:
50 gr. Norcia Black truffle, 25 gr. Extra-virgin
olive oil, 4 slices of bread lightly toasted,
salt
Wash and brush the truffles so that you
take off al the earth, the strain. Grate
or pound and add oil and salt. Lightly toast
the bread, the spread the fresh truffle
cream you have just prepared.

| 2) SPAGHETTI WITH NORCIA BLACK TRUFFLE |
4 servings:
100 gr. Norcia Black truffle, 80 gr. Extra-virgin
olive oil, 300 gr. thin spaghetti (es. n°
10 "DE CECCO"), salt (about ½
teaspoon).
Wash and brush the truffles so that you
take off al the earth, the strain. Grate
or pound and add oil and salt. Cook the
spaghetti separately, strain and serve them
plates, than added the truffles.

| 3) OMELETTE WITH NORCIA BLACK TRUFFLE |
4 servings:
100 gr. Norcia Black truffle, 40 gr. Extra-virgin
olive oil, 5 eggs, white wine, salt (about
½ teaspoon).
Wash and brush the truffles so that you take
off al the earth, the strain. Grate or pound
and add oil and salt. Break th eeggs in a
bowl, add the tuffles, some white whine and
stir well. Cook in a frying pan at low heat,
until it is lightly cokked, still soft.
