General rule and cooking instructions
for ll the recipes:
- 100 gr for person.
- Do not soak in water before cooking.
- Pour the Lentil in cold water with
celery and one garlic clove, then heat.
- Add salt either at the before or after
cooking, never while.
- Average cooking time 20 minutes.

| 1) PLAIN LENTILS
(side dish) |
When boiler (as indicated in the
general instructions), drain excess water,
add extra-virgin olive oil and some vinegar,
if you wish.

| 2) LENTILS WITH PORK TROTTERS |
The trotters, one every two servings, should
be boiler separately the added to already
cokked lentils, simmer together fro 10 minutes. |
| 3) LENTILS WITH FRESH SAUSAGES |
| In a small saucepan, prepare a sauce with
tomatoes and other spices (onion, garlic,
celery and similar) add fresh sausages (1-2
per serving) and let it cook. When ready,
add Lentils (already cooked as indicated in
the general instructions), and simmer together
for a few minutes. |
