How to prepare and conserve
In order to conserve and prepare the Castelluccio Lentils properly, you should follow the following three rules:

a) Never soak the Castelluccio Lentils before cooking;
b) Castelluccio Lentils doesn’t overcook or loose its shell;
c) You should keep the Castelluccio Lentils in closed glass or ceramic jars.

In order to conserve and prepare the Norcia Black Truffle properly, you should follow the following rules:

a) Fresh Norcia Black Truffle should be washed then dried carefully; to make it easier to take off the earth you should soak it in water for 15 minutes than brush it with a soft brush. The shell is edible just like the rest of the truffle, it is very tasty;
b) Norcia Black Truffle should never be cooked or heated;
c) You should never add cheese to dressings with Norcia Black Truffle;
d) Norcia Black Truffle should always be served with salt and extra-virgin olive oil;
e) Norcia Black Truffle should be used with other ingredients that are less tasty (es. river or lake water fishes, white meats with few spices);
f) Norcia Black Truffle should be grated or pound, never cut or sliced;
g) Norcia Black Truffle can be preserved in a vacuum (without air) for a short time, or washed, dried and then frozen for a few months.
