Tenacity, perseverance, creativity and immagination
are the main features of people from Norcia. Tenacityand
perseverance because, despite a somewhat unfriendly
territory and some natural mishaps, we managed to
keep the traditional agriculture intact; creativity
and fantasia, because we added that special touch
to food processing
It’s not just the ham, there are many other
products obtained from salted and dried meat such
as Spalle, Lonze or Capocolli, bacons, each one
with a specific aroma.
Norcia and the valnerina are also well know for
the wide variety of sausages: pork or
wild boar sausages , Salami
Coralline, Sanguinaccio,
Coppa, all very tasty and inviting.
In the valleys that are rich in green fields and
cereal cultivation, milk cow breeding has developed
as well. So while cow milk is mostly gathered and
processed in the Caseificio Sociale di Norcia, sheep
milk is still directly processed by the producers. |
